THE STORY OF OUR FOOD

Every time we take a bite of food, we are taking a bite out of the world. Every bite, every ingredient, and every spice, oil, and grain has a story - a story of how it got to your plate. In this module you choose one ingredient that you have recently consumed or have available in your home and follow its story from initial growth to disposal/waste.


 

In this section, you will choose one ingredient and following it through its journey in the food system.

  1. Open the Section 1 Workbook. You will find a template here for tracking your chosen ingredient through a food system.
    Note that we offer some information on the industrial food system, but some food systems may be smaller in scale (local food systems - farmers’ markets or buying directly from a farm) or may range from close-to-home to international (ingredients produced in Canada, USA, or beyond).

  2. Choose your ingredient and write it in the space provided. Ensure that it is an ingredient that you have at home - make sure you are able to store it or have it available in the coming weeks to test a recipe.
    If you have any questions about what size of food system this ingredient falls under (tip: first search where your chosen ingredient is grown), clarify this with your instructor.

  3. Using the template in the Section 1 workbook and the diagram below (“Industrial Food System”) as a guide, find credible sources that provide information on the various steps to producing your ingredient (not limited to growing, harvesting, transporting, processing, packaging, wholesaling, retailing, eating, disposing). Make sure you list the sources that you used to find this information.

  4. Complete the single-point rubric found in the lesson materials.
